Banana Cake

1 cup White sugar

1/2 cup of butter or margarine – softened to almost melted

2 large or 3 smaller ripe bananas – mashed

1 egg – beaten

4 tablespoons of sour milk (you can sour milk by adding a teaspoon of vinegar to milk)

1 teaspoon of baking soda

1 teaspoon of vanilla

1 1/2 cups of flour

Add in the order given and beat until blended

Use a 9×9 or 8×8 baking pan – greased and bake in 350 degree oven for 30-35 minutes

check after 30 minutes, then every 5 minutes –use a toothpick to the centre of the cake –it s/b clean when the cake is done.

 This is a good moist cake and sweet enough that you do not need icing.
